Ingredients
  

  • 1 tablespoon of butter
  • ½ cup of finely chopped onion
  • One 10.75-ounce can of condensed cream of chicken soup
  • 1 cup of sour cream
  • ¼ teaspoon of ground cumin
  • 8 corn tortillas 6-inch size
  • Two 4-ounce cans of chopped green chiles drained
  • 3 cups of cooked chicken cubed
  • 1 package 8 ounces of shredded Cheddar cheese
  • 1 package 8 ounces of shredded Monterey Jack cheese

Instructions
 

  • Lightly grease a 9x12-inch microwave-safe baking dish and set it aside.
  • In a large skillet over medium heat, melt the butter. Add the chopped onion and sauté, stirring frequently, until the onion is soft and translucent—about 5 minutes. Stir in the condensed cream of chicken soup, sour cream, and ground cumin, mixing until the ingredients are fully blended.
  • Arrange 4 tortillas in a single layer at the bottom of the prepared baking dish. Evenly top with one can of green chiles, 1½ cups of cubed cooked chicken, half of the soup mixture, half of the Cheddar cheese, and half of the Monterey Jack cheese. Repeat the layering process, finishing with the remaining Monterey Jack cheese on top.
  • Microwave the casserole on high for approximately 10 minutes, or until it’s hot and bubbling and the cheese on top has melted completely.
