Unicorn Breakfast Tacos

Ingredients
  

  • 2 cups 680 grams organic corn flour
  • 1.5 cups 350 ml warm water
  • 1 tablespoon organic refined coconut oil
  • 1/4 teaspoon Himalayan salt
  • 1/4 teaspoon spirulina powder
  • 2 teaspoons beet powder
  • 1 teaspoon butterfly pea powder
  • 1 teaspoon ground turmeric

Instructions
 

Making the Tortillas:

  • If you have a tortilla press at home, the process is straightforward: place some plastic wrap on the press, put a dough ball on it, and press down to flatten.
  • Alternatively, you can use the bottom of a plate along with two pieces of cut plastic bag to press the dough. This method may take a bit of practice to perfect, but once you get the hang of it, it becomes easy. I used this technique myself, so each tortilla has a unique shape.
  • Cook the tortillas on a cast iron skillet or frying pan over medium heat without any oil. Thin tortillas only need about 15 seconds per side; flip them carefully. Thicker tortillas will require a little more time to cook through.
  • These colorful rainbow tortillas pair wonderfully with toppings like refried beans, guacamole, salsa, vegan cheese, jalapeños, mushrooms, and assorted vegetables. Serve them with fresh lime juice and cilantro for a delicious meal—¡buen provecho!
