Ingredients
  

  • 1 pound of lean ground beef
  • 1 1 oz packet of taco seasoning
  • 1/4 cup of water or beef broth
  • 1 cup of refried beans optional
  • 2 cups of cooked Mexican rice or prepared instant Mexican rice
  • 4 large burrito-sized flour tortillas
  • 2 cups of Fritos or crushed Doritos
  • 1 cup of warm cheese dip such as Tostitos
  • 1 cup of shredded Mexican-style cheese blend
  • 1/2 cup of sour cream
  • Salsa to taste optional

Instructions
 

  • Begin by cooking the ground beef in a sauté pan, breaking it apart as it browns, until it's fully cooked and no longer pink. Add the taco seasoning and 1/4 cup of water, stirring to combine. Let it cook for another minute to absorb the flavors. Mix in the refried beans until well combined. If the mixture seems too thick, add a bit more water to reach your desired consistency.
  • While the beef mixture simmers, prepare your instant Mexican rice or reheat any cooked rice you have on hand. Warm the flour tortillas in the microwave for about 30 seconds to make them more pliable for wrapping.
  • To assemble the burritos, lay one tortilla flat on a clean surface. Spoon a few tablespoons of the beef and bean mixture into the center. Top it with a few tablespoons of rice, followed by a generous layer of Fritos or crushed Doritos. Add a spoonful of warm cheese dip, a sprinkle of shredded Mexican cheese, and a dollop of sour cream. Fold the sides of the tortilla inward, then roll it up tightly from one end to form a burrito. Repeat this process for the remaining tortillas and filling.
  • You can serve the burritos as they are, or toast them in a skillet over medium heat for a few minutes on each side to create a crispy exterior. Serve immediately, with salsa on the side if desired.

Notes

Storage: Homemade Taco Bell Beefy Melt Burritos are best enjoyed fresh, as the chips can lose their crunch and become soggy if left too long. That said, any leftovers can be stored in an airtight container in the refrigerator for up to 5 days.
Freezing: If you plan to freeze the burritos, it’s best to leave out the Fritos to prevent them from getting soggy. Wrap each burrito individually in plastic wrap, followed by a layer of aluminum foil, and store in the freezer for up to 3 months. When ready to eat, thaw and reheat using the microwave, stovetop, or oven.
Assembling Ahead: For the best texture, assemble the burritos right before serving to keep the Fritos crisp. If assembled in advance, the warmth of the fillings will soften the chips and compromise their crunch.
Toasting Option: These burritos can be served as they are, or lightly toasted in a skillet over medium heat to create a crispy, golden exterior.
