Swedish Oatmeal Lace Cookies

Swedish Oatmeal Lace Cookies are a thin, crisp treat made with oats, butter, and sugar that offers a delightful sweet, nutty flavor. These cookies are perfect for pairing with a hot beverage or as an elegant addition to any dessert table.

Ingredients
  

  • ¾ cup Granulated Sugar 150g
  • 1 Large Egg
  • ½ teaspoon Vanilla Extract
  • 1 Stick Unsalted Butter 113g
  • 2 cups Rolled Oats 200g
  • 2 tablespoons All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt

Instructions
 

  • Preheat the oven to 320°F / 160°C and line a baking sheet with parchment paper.
  • In a bowl, combine the sugar, egg, and vanilla, then whisk until pale and frothy (about 20 seconds of hand whisking). There's no need for a stand or electric mixer as this recipe comes together quickly and easily.
  • Melt the butter in the microwave in 30-second intervals, then add it to the sugar and egg mixture. Whisk just until combined.
  • Stir in the oats, flour, baking powder, and salt. I recommend switching to a spoon for this step so the mixture doesn't get stuck in the whisk.
  • Scoop a heaping teaspoon of cookie dough onto the prepared baking sheet. The dough will appear more like a blob than a perfect ball, but it will spread into a circular shape while baking.
  • Bake for 12 minutes. The cookies will have spread out into thin, lacy cookies with golden brown edges. The center may look slightly underdone, but they'll continue to bake as they cool.
  • Allow the cookies to sit on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Type of Oats - I used quick oats for my cookies, but you can also use rolled oats for a chunkier texture or instant oats for a finer consistency.
Perfectly Round Cookies - The cookies will spread into a circle, but if they aren't perfectly round and you'd like them to be, you can use a round cookie cutter to gently shape the edges while they are still warm!
