Sizzling Garlic Oil Spaghetti

Ingredients
  

  • 2/3 cup extra virgin olive oil
  • 8 cloves garlic minced
  • 3 teaspoons finely chopped fresh parsley *see notes
  • 3 teaspoons finely chopped fresh oregano or marjoram
  • 1 ½ teaspoons finely chopped fresh rosemary
  • 4 teaspoons finely chopped fresh basil
  • 2 teaspoons red pepper flakes
  • 2 teaspoons kosher salt or to taste
  • Balsamic vinegar
  • 1 pound fresh spaghetti cooked al dente
  • 1 to 2 tablespoons freshly grated Parmesan cheese

Instructions
 

Toasted Garlic

  • Combine all herbs and spices in a shallow bowl: 3 teaspoons fresh parsley, 3 teaspoons fresh oregano, 1 ½ teaspoons fresh rosemary, 4 teaspoons fresh basil, 2 teaspoons red pepper flakes, and 2 teaspoons kosher salt.
  • In a very small saucepan (I use my butter warmer), heat 2/3 cup olive oil over medium heat. Once the oil shimmers, add 8 cloves of minced garlic. Watch closely as the garlic browns quickly to avoid burning.
  • Pour the hot oil and toasted garlic over the herbs and spices, stirring thoroughly. Drizzle in some balsamic vinegar and sprinkle additional salt on top.
  • Place 1 pound of cooked spaghetti in a large serving bowl. Pour the hot garlic oil mixture over the pasta and toss well to coat. Sprinkle with 1-2 tablespoons freshly grated Parmesan cheese and serve immediately.

Fresh Garlic

  • Place all herbs, garlic, and spices together in a shallow bowl: 3 teaspoons fresh parsley, 3 teaspoons fresh oregano, 1 ½ teaspoons fresh rosemary, 4 teaspoons fresh basil, 2 teaspoons red pepper flakes, and 8 cloves minced garlic.
  • Heat 2/3 cup olive oil over medium heat until shimmering. Quickly pour the hot oil over the herb and garlic mixture, wait a moment, then add a drizzle of balsamic vinegar. Top with 2 teaspoons kosher salt.
  • Add 1 pound of cooked spaghetti to a large serving bowl, pour the hot garlic oil over it, and toss to coat evenly. Finish by sprinkling 1-2 tablespoons grated Parmesan cheese on top and serve immediately.

Notes

  • Use double the herbs if you’re using dried. 
  • Any variation of herbs work great!
