Ingredients
  

  • 400 g chicken thighs cut into small pieces
  • 2 cups chopped scallions
  • 4 tablespoons oil
  • 2 tablespoons soy sauce
  • 1/2 tablespoon dark soy sauce
  • 1/2 tablespoon oyster sauce
  • 1/2 teaspoon black pepper powder adjust to taste
  • 2 tablespoons cornstarch

Instructions
 

Step One:

  • Preparation – Combine the chicken thighs with soy sauce, oyster sauce, pepper, and cornstarch, then let it marinate for 10 minutes. While the chicken is marinating, chop the scallions, separating the white parts from the green parts.

Step Two:

  • Pan-Frying the Chicken – Heat oil in a non-stick pan over medium heat, then add the chicken pieces and fry until they’re fully cooked.

Step Three:

  • Adding Scallions – Once the chicken is cooked, add the white parts of the scallions and cook until they soften. If you're using larger chicken pieces or bone-in pieces, cover the pan with a lid and cook until the chicken is thoroughly done. Finally, toss in the green parts of the scallions and stir for 10-20 seconds to cook them lightly.

Step Four:

  • Serving – Sprinkle additional pepper or scallions on top if desired, and serve the dish with rice or noodles.

Notes

Food Safety: When preparing chicken dishes, it’s important to prioritize safety. Ensure that the chicken is thoroughly cooked. If the pieces are larger, you’ll need to cook them for a bit longer to ensure they’re fully done.
Non-Stick Pan: A non-stick pan is ideal for this recipe, especially because we’re using cornstarch, which can stick to regular pans.
Sugar: If you prefer a sweeter flavor, you can add sugar or honey. However, I find that the scallions release enough sweetness as they cook.
