- 14 oz chicken or turkey sausage sliced into ½-inch rounds
- 2 medium sweet potatoes peeled and diced into ½-inch cubes
- 2 cups broccoli florets cut into bite-sized pieces
- 1 tablespoon unsalted butter
- 4 cloves garlic minced
- ¼ cup honey
- ¼ cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley finely minced
Preheat your oven to 400°F (200°C) and lightly grease a large sheet pan. Arrange the sliced sausage, diced sweet potatoes, and broccoli florets evenly on the pan.
In a medium skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the honey, soy sauce, and apple cider vinegar. Roast in the preheated oven for 25–30 minutes, or until the sweet potatoes are tender and the edges are caramelized.
