Ingredients
  

  • 14 oz chicken or turkey sausage sliced into ½-inch rounds
  • 2 medium sweet potatoes peeled and diced into ½-inch cubes
  • 2 cups broccoli florets cut into bite-sized pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic minced
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley finely minced

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a large sheet pan. Arrange the sliced sausage, diced sweet potatoes, and broccoli florets evenly on the pan.
  • In a medium skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the honey, soy sauce, and apple cider vinegar. Bring the mixture to a gentle simmer, then reduce the heat to medium-low and let it cook for 3–5 minutes, stirring occasionally, until slightly thickened.
  • Pour the honey garlic sauce over the sausage and vegetables. Season with salt and pepper to taste, then toss everything together until well coated. Spread the ingredients out in a single layer on the sheet pan.
  • Roast in the preheated oven for 25–30 minutes, or until the sweet potatoes are tender and the edges are caramelized.
  • Remove from the oven, sprinkle with fresh minced parsley, and serve warm. Enjoy!
