Ingredients
  

  • 2 tablespoons of butter
  • 1 tablespoon of olive oil or avocado oil
  • 3 cloves of garlic minced
  • 2 tablespoons of red pepper optional
  • 1 teaspoon of lemon zest
  • 1 cup of long-grain rice
  • 1/4 teaspoon of turmeric powder
  • Salt and pepper to taste
  • 1 cup of vegetable broth
  • 1 cup of milk
  • 3 tablespoons of lemon juice
  • Additional lemon juice if desired

Instructions
 

  • Melt the butter and olive oil together in a pan over medium heat.
  • Add the lemon zest, red pepper, and minced garlic, and sauté until softened and fragrant.
  • Stir in the rice and mix to coat it well.
  • Season with turmeric, salt, and pepper.
  • Let the rice cook for 1 to 2 minutes, stirring occasionally.
  • Pour in the vegetable broth, milk, and lemon juice.
  • Bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the pan, and let it simmer.
  • Cook until the liquid is fully absorbed, about 15 to 20 minutes.
  • Remove the pan from the heat.
  • Taste the rice and adjust the seasoning if needed.
  • Garnish with fresh dill before serving.
