  • 1/2 cup crushed graham crackers
  • 2 tablespoons melted butter

Instructions

Prepare the Peach Topping:

  • In a medium saucepan, combine diced peaches, granulated sugar, lemon juice, ground cinnamon, and cornstarch.
  • Cook over medium heat, stirring occasionally, until the mixture thickens and becomes syrupy, about 5-7 minutes.
  • Remove from heat and let cool to room temperature.

Make the Cheesecake Mixture:

  • In a large bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.
  • Mix in sour cream until well combined.
  • In a separate bowl, whip heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

Prepare the Cone Base:

  • In a small bowl, mix crushed graham crackers with melted butter until the crumbs are evenly coated.
  • Spoon the graham cracker mixture into the bottom of each cone, pressing down lightly to form a base.

Assemble the Cones:

  • Spoon or pipe the cheesecake mixture on top of the graham cracker base in each cone.
  • Top with the cooled peach mixture.

Chill and Serve:

  • Place the filled cones in the refrigerator for at least 1-2 hours to allow the cheesecake to set.
  • Optionally, garnish with whipped cream and fresh mint leaves before serving.
