- 1 cup pecans
- 1 cup soaked pitted dates
- 2 tbsp coconut sugar or monk fruit
- Pinch of sea salt
- 1 tsp vanilla extract
- 1 tsp cinnamon optional
- 1 1/4 cups chocolate chips
Add all ingredients to a food processor, except for the chocolate, and blend until a sticky dough forms. This may take a few minutes, so be sure to scrape down the sides occasionally.
Roll the mixture into balls and arrange them on a lined cookie sheet. Gently flatten each ball with your palm. Place the sheet in the freezer for about 15 minutes to allow the bites to firm up.
Melt the chocolate until smooth, then dip each cookie bite into the chocolate and return it to the cookie sheet. Top each bite with a pecan. Return the sheet to the freezer until the chocolate hardens.
