No Bake Peanut Butter Granola Cups

No Bake Peanut Butter Granola Cups are a simple, delicious, and customizable snack made with wholesome ingredients like oats, peanut butter, and honey. These easy-to-make treats are perfect for a quick energy boost or satisfying craving without the need for baking.

Ingredients
  

  • 2 ½ cups granola
  • 1 cup peanuts chopped
  • 3 Tablespoons peanut butter
  • 3 Tablespoons honey or more, if needed

Filling:

  • 1 cup peanut butter melted

Topping:

  • 12 oz. dark chocolate finely chopped
  • 1 Tablespoon coconut oil

Instructions
 

  • To make Peanut Butter Granola Cups, combine granola, chopped peanuts, peanut butter, and honey in a bowl. If the mixture seems too dry, add more honey until the consistency becomes sticky enough to hold together.
  • Grease a cupcake pan and evenly divide the mixture into 12 cups. Press the mixture down firmly and create a small dent in the center of each cup. Freeze for 5-10 minutes, or until the cups become firm.
  • Next, melt the peanut butter and pour it into the center of each granola cup. Freeze again for another 5-10 minutes until firm.
  • Lastly, melt the dark chocolate and coconut oil together and spoon the melted chocolate over the peanut butter layer. Chill the cups until the chocolate has set.
  • Store the cups in an airtight container in the fridge, or freeze them for longer storage.
