- 2 ½ cups granola
- 1 cup peanuts chopped
- 3 Tablespoons peanut butter
- 3 Tablespoons honey or more, if needed
Filling:
- 1 cup peanut butter melted
Topping:
- 12 oz. dark chocolate finely chopped
- 1 Tablespoon coconut oil
To make Peanut Butter Granola Cups, combine granola, chopped peanuts, peanut butter, and honey in a bowl. If the mixture seems too dry, add more honey until the consistency becomes sticky enough to hold together.
Grease a cupcake pan and evenly divide the mixture into 12 cups. Press the mixture down firmly and create a small dent in the center of each cup. Freeze for 5-10 minutes, or until the cups become firm.
Next, melt the peanut butter and pour it into the center of each granola cup. Freeze again for another 5-10 minutes until firm.
Lastly, melt the dark chocolate and coconut oil together and spoon the melted chocolate over the peanut butter layer. Chill the cups until the chocolate has set.
Store the cups in an airtight container in the fridge, or freeze them for longer storage.
