Carrot Pineapple Cake Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1¾ cups white sugar
- 1 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups shredded carrots
- 1 cup flaked coconut
- 1 cup chopped walnuts
- 1 8-ounce can crushed pineapple, drained
Cream Cheese Frosting Ingredients:
- 1 8-ounce package cream cheese
- ¼ cup softened butter
- 2 cups confectioners' sugar
Start by gathering all the ingredients. Preheat your oven to 350°F (175°C), and prepare a 9x13-inch baking pan by greasing and flouring it thoroughly.
To make the cake: In a large mixing bowl, combine the flour, ground cinnamon, baking soda, baking powder, and salt. Create a well in the center of the dry ingredients and add the sugar, vegetable oil, eggs, and vanilla extract. Using a wooden spoon, mix everything together until the batter is smooth.
