Chicken Pasta

  • 1 1/2 pounds boneless skinless chicken, cut into 1-inch pieces
  • 10 ounces penne pasta
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil

For the Sauce:

  • 3 tablespoons butter
  • 2 teaspoons minced garlic
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup sun-dried tomatoes drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Fresh basil for garnish

Chicken Pasta

  • Cook the pasta according to the package instructions. Drain it and set aside while preparing the chicken and sauce.
  • Cut the chicken into 1-inch bite-sized pieces and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink. Transfer the cooked chicken to a plate and set it aside.

Sauce

  • Using the same skillet, melt the butter over medium heat. Once melted, sauté the garlic for about 30 seconds until fragrant. Add the flour and stir well to create a smooth paste.
  • Slowly whisk in the chicken broth, heavy cream, and Parmesan cheese until combined.
  • Stir in the drained sun-dried tomatoes, paprika, and Italian seasoning. Taste and adjust with additional salt and pepper if needed. Let the sauce simmer for a few minutes until it thickens slightly.
  • Return the chicken to the skillet, along with the cooked pasta. Toss everything together until the chicken and pasta are fully coated in the sauce.
  • Garnish with chopped fresh basil and extra Parmesan cheese before serving.
