Loaded Potato and Meatloaf Casserole

Ingredients
  

  • 1 ½ pounds lean ground beef or ground turkey
  • ½ cup finely chopped white onion
  • 1 tablespoon minced garlic
  • 1 cup seasoned breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 1 large egg beaten
  • cup cottage cheese
  • ½ cup barbecue sauce
  • 2 pounds potatoes peeled and cut into cubes
  • ½ cup butter
  • ½ cup sour cream
  • ½ cup warm milk or half-and-half
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 6 slices thick-cut bacon cooked and crumbled
  • 1 ½ cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish with nonstick cooking spray. Set aside.
  • In a large mixing bowl, combine the ground meat, chopped onion, minced garlic, breadcrumbs, Worcestershire sauce, beaten egg, cottage cheese, and BBQ sauce. Mix until well combined.
  • Press the meat mixture evenly into the prepared baking dish to form the meatloaf layer. Place it in the oven and bake for 30 minutes.
  • While the meatloaf is baking, add the diced potatoes to a pot and cover them with water. Cook over medium heat until the potatoes are tender.
  • Drain the potatoes, then add the butter to the pot. Use a hand mixer to mash the potatoes until smooth. Add the sour cream, warm milk, salt, and pepper, and mix again until creamy.
  • After the meatloaf has baked, remove it from the oven and carefully pour off any excess grease.
  • Spread the mashed potatoes evenly over the meatloaf layer. Top with shredded cheddar cheese and crumbled bacon.
  • Return the dish to the oven and bake for an additional 15 minutes, or until the potatoes are warmed through and the cheese has melted.
  • Remove from the oven and serve the casserole hot with your favorite side dishes.

Notes

Storage:
Fridge: Cover the casserole tightly or transfer leftovers to airtight containers or bags, and store in the refrigerator for up to 5 days.
Freezer: Wrap the casserole securely or place it in airtight containers. Freeze for up to three months. Be sure to thaw before reheating.
Reheat: To reheat, place leftovers in an ovenproof dish and bake at 375°F until thoroughly heated. Use an instant-read thermometer to check several spots in the casserole to ensure it is fully reheated.
