  • 1 14-ounce bag of corn tortilla chips
  • 1 15-ounce jar of salsa con queso
  • 4 to 6 ounces shredded cheddar cheese plus extra if desired
  • 6 ounces Mexican chorizo or 12 ounces for a meatier option

Toppings:

  • 2 jalapeño peppers chopped or sliced into rings
  • 1 large ripe avocado peeled, pitted, and diced (or substitute with guacamole)
  • Fresh diced tomato
  • Chopped cilantro
  • Sour cream or crema as desired

Instructions
 

  • In a large oven-safe dish, spread the tortilla chips evenly. Pour the salsa con queso over the chips and mix to coat well. Sprinkle shredded cheddar cheese on top. Heat a small skillet over medium heat, add the chorizo, and cook for about 8 to 9 minutes until fully cooked. Crumble the cooked chorizo evenly over the cheese layer. Preheat the oven to 220 degrees Celsius (or about 425 degrees Fahrenheit) and bake the dish until the cheese is melted and bubbly. Remove from the oven and garnish with fresh jalapeño slices, diced avocado, chopped tomato, and cilantro. Add crema or sour cream if desired. Serve immediately and enjoy!
