Keto No-Bake Cookies
Keto no-bake cookies are a quick, delicious, and satisfying dessert that combines rich chocolate flavors with a crunchy texture, perfect for any keto or low-carb lifestyle.
- 2 tablespoons butter
- 2/3 cup natural chunky peanut butter or any nut butter
- 1 cup unsweetened shredded coconut
- 1 tablespoon cocoa powder
- 4 drops liquid vanilla stevia or liquid sweetener of choice
In a microwave-safe bowl, melt the butter.
Stir in the peanut butter and cocoa powder until the mixture is smooth.
Add the shredded coconut and stevia, then mix thoroughly.
Scoop tablespoon-sized portions onto a parchment-lined sheet pan or any dish that fits in your freezer, such as a plate or cutting board.
Freeze for 15 minutes.
Cut the parchment paper around each cookie while leaving the paper underneath to prevent sticking.
Store the cookies in a sealed container or bag in the refrigerator. Enjoy!
