For Meatballs:
- 1 lb ground pork
- 1 lb Italian ground sausage mild or spicy to suit your taste
- 1/2 cup very finely minced onion
- 1/4 cup minced garlic
- 1 stalk celery finely minced
- 1 egg
For Sauce:
- 1/2 cup butter
- 1/4 cup diced garlic
- 1/2 cup beef stock
- Salt and pepper to taste a generous pinch of each
- 1/4 cup grated Parmesan cheese
For the Meatballs:
If preparing fresh, combine all meatball ingredients in a large bowl and mix thoroughly.
Shape the mixture into 2-inch (golf ball-sized) balls.
Refrigerate for 1 hour to allow them to set.
For the Meal:
Heat olive oil in a pan or Dutch oven over medium-high heat until it shimmers.
