  • 3 large eggs
  • 1 cup almond flour choose finely ground almond flour for the best texture
  • 1 cup cottage cheese
  • 1 tablespoon granulated brown sweetener use a keto-friendly option like erythritol or monk fruit
  • Butter for frying
  • 1/2 teaspoon baking powder

Instructions
 

  • In a medium bowl, combine all the ingredients and whisk thoroughly with a fork for about a minute.
  • Preheat a skillet over medium heat.
  • Grease the skillet with butter or cooking spray.
  • Scoop the batter onto the skillet, forming 4 small, evenly sized rounds. Cook each pancake for 1-2 minutes per side until golden brown. Repeat with the remaining batter.
