- 1 pound ground beef
- 1 packet of taco seasoning or 3 tablespoons of homemade taco seasoning
- 1 4- ounce can of diced green chilies
- 10 ounces of mild red enchilada sauce
- 2 tablespoons of sour cream
- 8 almond flour tortillas
- 2 cups of shredded Mexican blend cheese
Preheat your oven to 375°F.
Cook the ground beef in a skillet until browned, then stir in the taco seasoning.
Mix the diced green chiles into the cooked beef.
Scoop the beef mixture onto the almond flour tortillas, roll them tightly, and place them seam-side down in a greased baking dish.
In a separate bowl, whisk the sour cream into the enchilada sauce until smooth, then pour it evenly over the enchiladas.
Sprinkle the shredded Mexican blend cheese over the top, then cover the dish with foil.
Bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes.
Take the keto beef enchiladas out of the oven and let them cool slightly before serving.
