Ingredients
  

  • 1 pound ground beef
  • 1 packet of taco seasoning or 3 tablespoons of homemade taco seasoning
  • 1 4- ounce can of diced green chilies
  • 10 ounces of mild red enchilada sauce
  • 2 tablespoons of sour cream
  • 8 almond flour tortillas
  • 2 cups of shredded Mexican blend cheese

Instructions
 

  • Preheat your oven to 375°F.
  • Cook the ground beef in a skillet until browned, then stir in the taco seasoning.
  • Mix the diced green chiles into the cooked beef.
  • Scoop the beef mixture onto the almond flour tortillas, roll them tightly, and place them seam-side down in a greased baking dish.
  • In a separate bowl, whisk the sour cream into the enchilada sauce until smooth, then pour it evenly over the enchiladas.
  • Sprinkle the shredded Mexican blend cheese over the top, then cover the dish with foil.
  • Bake in the preheated oven for 15 minutes. Remove the foil and bake for an additional 5 minutes.
  • Take the keto beef enchiladas out of the oven and let them cool slightly before serving.
