- 2 pounds boneless skinless chicken thighs, fat removed, cut into 1-inch pieces
- ▢¼ cup 32 g cornstarch
- ▢¼ teaspoon kosher salt
- ▢¼ teaspoon ground black pepper
- ▢2 tablespoons extra virgin olive oil
- ▢⅓ cup 85 g soy sauce
- ▢⅓ cup 83 g water
- ▢⅓ cup 67 g packed light brown sugar
- ▢1 teaspoon sesame oil
- ▢2 teaspoons minced garlic
- ▢½ yellow onion diced
- ▢2 large jalapeño peppers sliced into thin rounds
- ▢Sesame seeds for garnish
- ▢Cooked white rice for serving
In a large mixing bowl, combine the chicken, cornstarch, salt, and pepper. Toss everything together to ensure the chicken is evenly coated on all sides. Set aside.
In a medium mixing bowl, combine the water, soy sauce, brown sugar, sesame oil, and garlic. Stir well and set aside.
Heat oil in a large nonstick skillet over medium-high heat. Once the oil is shimmering, carefully add the chicken to the hot oil. (If the skillet is small, you may need to cook the chicken in batches.) Cook the chicken for 2-3 minutes per side, or until browned and cooked through, reaching an internal temperature of 165°F. Transfer the chicken to a plate and tent with foil to keep warm.
In the same skillet, add the onions and jalapeños. Cook until softened, about 4-6 minutes.
Add the chicken and soy sauce mixture to the skillet and stir to combine. Continue cooking for 2-3 minutes.
Serve the dish garnished with sesame seeds over cooked white rice.
Air Fryer Chicken
To cook the chicken in an air fryer, preheat the air fryer to 400°F. Coat the chicken in the cornstarch, salt, and pepper mixture. Place the chicken into the air fryer basket and cook for about 10 minutes, flipping halfway through, or until the chicken reaches an internal temperature of 165°F.
Set the cooked chicken aside while you prepare the sauce and cook the onions and jalapeño peppers.
