Ingredients
  

  • ½ cup heavy cream
  • 5 tablespoons butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 2 tablespoons psyllium husk powder
  • 2 teaspoons baking powder
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger

For the covering:

  • 2 tablespoons butter melted
  • 1 teaspoon cinnamon

Instructions
 

  • Preheat the oven to 350°F and line a muffin pan with paper liners.
  • In a medium bowl, use an electric mixer to cream together the butter, sweetener, and vanilla until smooth. Beat in the eggs and heavy cream until fully combined.
  • In a separate bowl, whisk together all the dry ingredients, excluding the topping ingredients. Gradually add the dry mixture to the wet mixture, mixing continuously with the electric mixer until smooth.
  • Evenly distribute the batter into the prepared muffin cups.
  • Bake for 18-20 minutes, or until the edges are golden and the muffins are set.
  • Let the muffins cool completely.
  • Brush the cooled muffins with melted butter, then roll them in the cinnamon-sweetener mixture. Serve and enjoy!
