Ingredients
  

  • 450 g 1 lb shrimp, peeled and deveined
  • 1 tablespoon light soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 3 –4 cloves garlic minced
  • 1 tablespoon ginger paste or freshly grated ginger
  • 4 tablespoons honey
  • 1/4 teaspoon chili flakes optional
  • 2 green onions chopped, for garnish

Instructions
 

  • In a medium bowl, mix the soy sauce and cornstarch. Add the shrimp and toss until well coated. Set aside for later use. (This technique, known as "velveting" in Chinese cooking, helps keep delicate proteins like shrimp and chicken tender and moist during cooking.)
  • Heat the oil in a non-stick frying pan over medium heat. Add the minced garlic and ginger, cooking for no more than 30 seconds until fragrant. Add the shrimp and cook for 1-2 minutes per side, depending on their size.
  • Pour in the honey and, if desired, the chili flakes. Toss to evenly coat the shrimp in the sauce, then remove from the heat. Garnish with sliced green onions and serve hot, either over rice or as an appetizer.
