Ingredients
  

  • 2 teaspoons vegetable oil
  • 1 pound lean ground beef
  • Salt and pepper to taste
  • 1 medium yellow onion finely diced
  • 2 cloves garlic minced
  • 4 cups chopped green cabbage
  • 2 medium carrots quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 cans 8 ounces each tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tablespoons light brown sugar
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • In a Dutch oven or large soup pot, heat the vegetable oil over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking it into crumbles as it cooks. Add the finely diced onion and minced garlic to the pot, stirring and cooking for 2-3 minutes until the onion becomes tender and translucent. Stir in the chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked white rice, bay leaf, and brown sugar, mixing everything thoroughly to combine the flavors. Bring the soup to a gentle simmer and cook for approximately 25 minutes, or until the rice is fully tender. Remove the bay leaf and garnish the soup with freshly chopped parsley just before serving.
