Ingredients
  

  • 1 cup blanched almond flour
  • 2 tbsp coconut flour
  • 3 tbsp melted vegan butter
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • ¼ cup chocolate chips or more to taste

Instructions
 

  • Melt the butter in a bowl in the microwave.
  • Whisk in the maple syrup and vanilla extract.
  • Add all the remaining ingredients to the bowl, except for the chocolate chips, and mix well to combine.
  • Fold in the chocolate chips.
  • Taste and adjust the flavors as needed. For a slightly sweeter version, I sometimes add a sprinkle of granulated sugar, but it's up to you!
  • Place the mixture in the fridge for about 20 minutes to firm up, which will also help the flavors meld together.
  • Serve in bowls or roll into balls.

Notes

The coconut flour can be subbed with tapioca starch, though this will change the flavor/texture a bit.
