In a cast iron skillet, heat the olive oil over medium-high heat.
Add the ground turkey and garlic, using a wooden spoon to break up the turkey as it cooks. Stir occasionally and cook for about 5 minutes.
Next, add the diced onions and yellow peppers, cooking until the onions soften.
Stir in the diced sweet potatoes, red chili flakes, salt, and pepper.
Cover the skillet and cook, stirring occasionally, until the sweet potatoes are tender. If needed, add more olive oil or a small amount of water to speed up the cooking process.
While the sweet potatoes cook, preheat your oven to 400ºF.
Once the sweet potatoes are tender, sprinkle the shredded mozzarella cheese on top and transfer the skillet to the oven to melt the cheese.
After the cheese has melted, remove the skillet from the oven and garnish with fresh parsley.
