Spice Mix:
- 2 teaspoons paprika
- 2 teaspoons dried parsley
- 1 1/2 teaspoons garlic salt
- 1 teaspoon onion powder
- 1 teaspoon ground pepper
Chicken and Potatoes:
- 1 1/2 lbs. boneless skinless chicken breasts, cut into 1-inch pieces
- 24 oz. red potatoes cut into 1-inch cubes
- 4 tablespoons grated Parmesan cheese divided
- 2 tablespoons minced garlic divided
- 2 tablespoons olive oil divided
Spice Mixture:
In a small bowl, combine the paprika, garlic salt, onion powder, parsley, and ground pepper. Mix well. Divide the spice mixture evenly into two portions (about 1 tablespoon each). One portion will be used for the potatoes, and the other will be saved for the chicken.
For the Potatoes:
In a mixing bowl, combine the cut potatoes, 2 tablespoons of grated Parmesan cheese, 1 tablespoon of olive oil, 1 tablespoon of minced garlic, and 1 tablespoon of the spice mixture (reserve the remaining spice mixture for the chicken). Use a rubber scraper to toss the potatoes, ensuring they are evenly coated.
Spread the seasoned potatoes onto the prepared sheet pan, keeping them on one side to leave room for the chicken. Roast the potatoes at 400°F for 15 minutes, as they need more time to cook than the chicken.
For the Chicken:
While the potatoes are pre-cooking, prepare the chicken. In a mixing bowl, add the cut chicken pieces. To the chicken, add the remaining 1 tablespoon of olive oil, 2 tablespoons of Parmesan cheese, 1 tablespoon of minced garlic, and the remaining spice mixture. Stir with a rubber scraper to coat the chicken evenly.
After the potatoes have baked for 15 minutes, remove the pan from the oven. Add the seasoned chicken pieces to the other side of the pan, then return the pan to the oven. Bake the potatoes and chicken for an additional 20 minutes.
Meal Prep Recommendations:
For optimal results, place the chicken and potatoes into a 2 or 3-compartment meal prep container. These glass meal prep containers from Amazon are ideal, as they are microwave, freezer, and dishwasher safe.
Refrigeration:
Store the chicken and potatoes in an airtight container and refrigerate. When kept sealed and stored properly, they will stay fresh for 5-7 days.
