- 2 pounds of sirloin steak
- 1 tablespoon of olive oil for drizzling plus additional for cooking
- 1½ tablespoons of Gaby’s Everyday Seasoning
- ½ cup of unsalted butter
- 1 finely chopped shallot
- Kosher salt and freshly cracked black pepper to taste
- 2 teaspoons of finely chopped thyme
- 6 cloves of garlic finely chopped
- 2 tablespoons of Worcestershire sauce
- Polenta or mashed potatoes for serving
Cut the steak into 1-inch cubes and place them in a bowl. Drizzle with 1 tablespoon of olive oil, sprinkle with Gaby's Everyday Seasoning, and gently toss until the steak is evenly coated.
Heat a large cast-iron skillet over medium-high heat. Once the skillet is hot, add 2 tablespoons of olive oil. When the oil begins to shimmer, add the steak cubes in small batches, ensuring the pan isn’t overcrowded. Sear the steak for 1-2 minutes on one side, then flip and cook for an additional 1-2 minutes to achieve a golden-brown crust.
Transfer the cooked steak bites to a clean plate and set aside. Lower the heat to medium-low, then add butter and shallots to the skillet. Season with kosher salt and freshly cracked black pepper, and cook for 1-2 minutes until the shallots become fragrant. Stir in the thyme, garlic, and Worcestershire sauce, cooking for about 30 seconds more. Return the steak bites to the skillet, toss them in the butter mixture, and serve immediately.
