Ingredients
  

  • 3 boneless skinless chicken breasts
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 teaspoon plus 1/4 teaspoon paprika
  • 4 tablespoons melted butter use ghee for Whole30
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley chopped
  • 2 garlic cloves minced
  • 1 tablespoon extra-virgin olive oil

Instructions
 

  • Preheat the oven to 400°F. Season the chicken breasts with salt, pepper, and 1/2 teaspoon of paprika, then set aside.
  • In a small bowl, combine 1/4 teaspoon of paprika, melted butter, Italian seasoning, parsley, and minced garlic. Set the mixture aside.
  • Heat olive oil in a cast-iron skillet over medium heat. Once the skillet is hot, add the chicken breasts and sear until golden brown, about 1-2 minutes per side.
  • Pour the garlic butter mixture over the chicken breasts. Transfer the skillet to the oven and bake for 20-30 minutes, or until the internal temperature of the chicken reaches 165°F.
  • Remove from the oven and spoon some of the buttery sauce from the skillet over the chicken before serving.

Notes

Fresh garlic cloves offer superior flavor compared to pre-minced garlic, so I recommend using fresh garlic.
Choose chicken breasts of similar size to ensure even cooking.
If you don’t have a cast-iron skillet, a regular pan will work. Sear the chicken on the stove, then transfer it to a baking dish or sheet pan to finish cooking in the oven.
Storage: Store leftover chicken breasts in an airtight container in the refrigerator for up to 4 days.
Reheating: Reheat in the microwave when ready to eat, or enjoy the chicken cold.
Freezing: Freeze cooked chicken breasts in a freezer-safe bag or container for up to 3 months
