Ingredients

→ Shells

  • 3 cups Fruity Pebbles cereal
  • ½ cup unsalted butter melted

→ Filling

  • 8 ounces cream cheese softened to room temperature
  • ½ cup powdered sugar sifted
  • 1 teaspoon pure vanilla extract
  • 1 cup whipped cream

→ Garnish

  • Extra Fruity Pebbles cereal for topping

Instructions

  • In a mixing bowl, combine the Fruity Pebbles cereal with the melted butter, stirring well until every piece is fully coated.
  • Firmly press the cereal mixture into small taco-shaped molds or muffin tins, compacting tightly. Place them in the refrigerator and chill for at least 30 minutes to set.
  • Using a hand mixer, beat the cream cheese until it becomes light and fluffy. Gradually add the powdered sugar and vanilla extract, mixing until smooth and well combined.
  • Carefully fold the whipped cream into the cream cheese mixture with a spatula, keeping the texture light and airy.
  • Once the cereal shells have set and are firm, generously spoon the cheesecake filling into each shell.
  • Top with extra Fruity Pebbles cereal for garnish. Serve immediately or chill further for a firmer consistency.
