Ingredients

  • 2 tablespoons of melted butter
  • 2 eggs
  • ¼ cup of 2% or whole milk
  • ½ cup of flour
  • ¾ teaspoon of baking powder
  • ¼ teaspoon of salt
  • cup of grated cheddar cheese
  • ¼ cup of grated Parmesan cheese
  • 1 husked cob of sweet corn*
  • 1 tablespoon of chopped chives

Instructions

  • In a large mixing bowl, whisk together the melted butter, milk, and eggs. Gradually add the flour, baking powder, and salt, stirring until just combined.
  • Gently fold in the grated Cheddar, Parmesan, sweet corn kernels, and chopped chives, mixing until evenly incorporated.
  • Heat a skillet over medium-high heat and add a drizzle of olive oil or a small pat of butter.
  • Once the oil is hot and fragrant, scoop ½ cup of batter into the pan for each fritter, ensuring they are spaced apart to avoid overcrowding.
  • Cook for 2-3 minutes until the bottom turns golden brown and bubbles appear on the surface. Flip and cook for another 2-3 minutes until fully golden brown.
  • Remove from the skillet and repeat with the remaining batter. Serve hot.

Notes

OPTIONAL: Add 1/2 cup cooked meat to the batter (crumbled bacon, diced sausage or ham are all great additions)

*3/4 cup canned or frozen (heated) corn can be substituted for fresh sweet corn. Just be sure to drain it very well.
