Easy Cheesy Corn Fritters are a crispy, cheesy, and flavorful treat that can be made in under 30 minutes with simple ingredients. They are versatile, customizable, and perfect as a snack, appetizer, or side dish.

- 2 tablespoons of melted butter
- 2 eggs
- ¼ cup of 2% or whole milk
- ½ cup of flour
- ¾ teaspoon of baking powder
- ¼ teaspoon of salt
- ⅔ cup of grated cheddar cheese
- ¼ cup of grated Parmesan cheese
- 1 husked cob of sweet corn*
- 1 tablespoon of chopped chives
In a large mixing bowl, whisk together the melted butter, milk, and eggs. Gradually add the flour, baking powder, and salt, stirring until just combined.
Gently fold in the grated Cheddar, Parmesan, sweet corn kernels, and chopped chives, mixing until evenly incorporated.
Heat a skillet over medium-high heat and add a drizzle of olive oil or a small pat of butter.
Once the oil is hot and fragrant, scoop ½ cup of batter into the pan for each fritter, ensuring they are spaced apart to avoid overcrowding.
Cook for 2-3 minutes until the bottom turns golden brown and bubbles appear on the surface. Flip and cook for another 2-3 minutes until fully golden brown.
Remove from the skillet and repeat with the remaining batter. Serve hot.
OPTIONAL: Add 1/2 cup cooked meat to the batter (crumbled bacon, diced sausage or ham are all great additions)
*3/4 cup canned or frozen (heated) corn can be substituted for fresh sweet corn. Just be sure to drain it very well.
