- 1 tablespoon extra-virgin olive oil or adjust to taste
- 1 tablespoon butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- A pinch of ground nutmeg
- Salt to taste
- 30 medium uncooked shrimp peeled and deveined
- 4 teaspoons Italian seasoning divided
- 1 cup shredded Cheddar cheese
- 1 shallot thinly sliced
- 1 tablespoon chopped fresh parsley or adjust to taste
- ½ cup dry bread crumbs
- ½ cup grated Parmesan cheese
Preheat the oven to 350°F (175°C).
In a skillet, heat the oil and butter over medium-high heat until the butter melts. Lower the heat to medium, whisk in the flour, and stir until a thick paste forms, about 5 minutes. Gradually whisk in the milk and bring the mixture to a simmer. Continue to cook and stir until the sauce thickens and becomes smooth, 5 to 10 minutes. Season with nutmeg and salt.
Arrange the shrimp in a casserole dish, coating them with 3 teaspoons of Italian seasoning and salt to taste. Pour the sauce over the shrimp and sprinkle the Cheddar cheese on top. Add the shallot, the remaining Italian seasoning, and parsley. Top with the bread crumbs and finish with the Parmesan cheese.
Bake in the preheated oven for about 25 minutes, or until the top is crisp.
