Crispy Avocado Fries

Ingredients
  

  • ¾ cup panko breadcrumbs
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • 2 large avocados ripe yet firm
  • Extra-virgin olive oil for drizzling
  • Chipotle ranch or your preferred dipping sauce

Instructions
 

  • Preheat your oven to 425°F and line a baking sheet with parchment paper.
  • In a shallow medium bowl, combine the panko breadcrumbs with coriander, cumin, and sea salt. Place the flour in a separate small bowl, and beat the eggs in another bowl.
  • Slice the avocados lengthwise into 8 wedges each and carefully remove the skins. One at a time, dredge each avocado slice in the flour, coating all sides and shaking off any excess. Next, dip it into the beaten eggs, followed by the panko mixture, pressing lightly to adhere.
  • Arrange the coated avocado slices on the prepared baking sheet, drizzle lightly with extra-virgin olive oil, and bake for 12 to 14 minutes, or until they are golden brown and crispy.
