- 1 pound of ground Italian sausage
- 1 pound of penne pasta
- 1 tablespoon of olive oil
- 1/2 yellow onion minced
- 2 cloves of garlic minced
- 1/2 teaspoon of red pepper flakes
- 1/2 teaspoon of salt
- 2 cups of heavy cream
- 5 ounces of baby spinach
- 1 cup of shredded Parmesan cheese
Cook the penne pasta in a large pot of salted boiling water, following the package instructions.
While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
Add the Italian sausage, onion, garlic, red pepper flakes, and salt to the skillet, cooking until the sausage is no longer pink.
If needed, drain any excess fat from the skillet and return the sausage mixture to the pan.
Reduce the heat to low, then pour in the heavy cream. Bring to a simmer and stir in the spinach.
Cook for about 3 minutes, stirring occasionally, until the spinach wilts.
Mix in the Parmesan cheese until it melts smoothly into the sauce.
Finally, toss the cooked pasta into the sauce and stir to coat.
Serve immediately.
