Ingredients
  

  • 1 pound of ground Italian sausage
  • 1 pound of penne pasta
  • 1 tablespoon of olive oil
  • 1/2 yellow onion minced
  • 2 cloves of garlic minced
  • 1/2 teaspoon of red pepper flakes
  • 1/2 teaspoon of salt
  • 2 cups of heavy cream
  • 5 ounces of baby spinach
  • 1 cup of shredded Parmesan cheese

Instructions
 

  • Cook the penne pasta in a large pot of salted boiling water, following the package instructions.
  • While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
  • Add the Italian sausage, onion, garlic, red pepper flakes, and salt to the skillet, cooking until the sausage is no longer pink.
  • If needed, drain any excess fat from the skillet and return the sausage mixture to the pan.
  • Reduce the heat to low, then pour in the heavy cream. Bring to a simmer and stir in the spinach.
  • Cook for about 3 minutes, stirring occasionally, until the spinach wilts.
  • Mix in the Parmesan cheese until it melts smoothly into the sauce.
  • Finally, toss the cooked pasta into the sauce and stir to coat.
  • Serve immediately.
