Creamy Cucumber Salad

Ingredients
  

  • 3 cups of thinly sliced cucumbers
  • 1 cup of thinly sliced red onion
  • 1/2 cup of sour cream
  • 1 tablespoon of white vinegar
  • 2 tablespoons of freshly minced dill
  • 1 teaspoon of granulated sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of garlic powder

Instructions
 

  • Thinly slice the onion using a sharp knife or mandoline. Wash the cucumbers, slice them thinly as well, and then pat them dry with paper towels to remove any excess moisture.
  • In a medium mixing bowl, combine the sour cream, white vinegar, minced fresh dill, granulated sugar, salt, and garlic powder. Stir until everything is well mixed.
  • Add the sliced cucumbers and red onion to the bowl and toss gently to coat.
  • Garnish with extra fresh dill and freshly ground black pepper, if desired. Serve immediately or cover and refrigerate to chill before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Make-Ahead & Storage Tips
For the best flavor, prepare this salad at least 1 hour before serving and refrigerate it to allow the flavors to meld together. If you'd like to make it further in advance, you can slice and store the vegetables separately, then toss them with the dressing just before serving. This salad can be stored in an airtight container in the fridge for up to 3 days.
