The Coconut Key Lime Pie Smoothie is a delicious and healthy twist on the classic dessert, blending tropical flavors into a refreshing drink. It’s versatile and easy to customize, making it a perfect treat for any occasion.

Ingredients
  

  • 1 large frozen ripe banana sliced
  • Zest from 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt use coconut yogurt for a dairy-free option*
  • ½ cup light coconut milk or your preferred milk
  • ½ cup fresh spinach**
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey for added sweetness if desired

For serving:

  • Extra lime wedge for rimming the glass
  • Graham cracker crumbs
  • Whipped cream
  • Shredded toasted coconut

Instructions
 

  • Begin by preparing your glass: Place crushed graham crackers on a small plate. Use a lime wedge to moisten the rim of the glass, then dip it into the graham cracker crumbs, rolling it from side to side until fully coated.
  • Next, add all the ingredients to a high-powered blender: the frozen banana, lime zest, lime juice, vanilla yogurt, milk, spinach, and vanilla extract. Blend until smooth, adding more milk if needed to achieve your desired consistency. Taste the mixture and add sweetener if necessary; however, if you're using vanilla yogurt, it’s usually sweet enough on its own! Pour the smoothie into the prepared glass, then top with whipped cream and a sprinkle of shredded toasted coconut. This recipe serves 1, but feel free to double it to serve 2.

Notes

*Siggi’s offers an incredible key lime yogurt that, while hard to find, would be fantastic in this smoothie. If you can’t find it, vanilla or coconut-flavored yogurts work well too.
To keep this smoothie vegan or dairy-free, opt for a coconut-based yogurt or any vanilla dairy-free yogurt of your choice.
**You can add up to 2 cups of spinach; I primarily used it for color in this smoothie. If you’d like to boost the protein content, feel free to include a scoop of vanilla protein powder, which will also enhance the flavor of the smoothie.
