Ingredients
  

For the scramble:

  • ▢4 large eggs
  • ▢1.5 tablespoons heavy cream or milk
  • ▢1 1/2 teaspoons Old Bay seasoning or to taste
  • ▢Salt and pepper to taste
  • ▢1.5 tablespoons frying oil or clarified butter
  • ▢4 cups 600g chopped cooked potatoes
  • ▢2 oz 60g ham, chopped into cubes
  • ▢1 cup shredded cheese a mix of aged cheddar and Gruyere works well

To serve:

  • ▢Sour cream
  • ▢Chives

Instructions
 

  • In a medium bowl, whisk together the eggs, heavy cream, and Old Bay seasoning. Season with salt and pepper, then set aside.
  • Heat the oil in a large frying pan over medium-high heat. Add the chopped potatoes and cook until browned on all sides.
  • Add the ham and egg mixture to the pan. Cook over low heat, stirring gently, until the eggs are partially cooked (they should not be fully set). Season with salt and pepper to taste.
  • Evenly sprinkle the shredded cheese over the eggs and potatoes. Cover the pan with a lid and cook on low heat until the cheese has melted and the eggs are fully cooked.
  • Transfer the scramble to plates and serve with a dollop of sour cream and a sprinkle of chopped chives.
  • Enjoy!

Notes

Instead of Old Bay seasoning, feel free to use Cajun seasoning, Fajita seasoning, or Chili powder (spice mix).
If you'd prefer, swap the ham for crumbled fried bacon on top of the dish.
Instead of chives, you can opt for thinly sliced scallions.
This dish is also versatile with veggies, so feel free to add any you like. Pan-fried mushrooms and bell peppers would be especially delicious.
