Ingredients
  

  • 1 tablespoon olive oil
  • 6 boneless skinless chicken thighs or breasts (cut into bite-sized pieces; 4 to 6 ounces each)
  • 4 bell peppers sliced; use a variety of colors for a vibrant look!
  • 1 small onion sliced
  • 1 recipe or package of fajita seasoning mix taco seasoning can be used as an alternative
  • 1 cup sour cream
  • 4 ounces cream cheese softened
  • 2 cups grated cheddar cheese
  • Optional for serving: avocado guacamole, extra sour cream, and salsa.

Instructions
 

  • Preheat the oven to 350°F. In a medium skillet, sauté the chicken in olive oil until fully cooked. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add the onions and bell peppers, sautéing until they reach your desired level of tenderness.
  • Return the chicken to the pan and stir in the taco seasoning, sour cream, and cream cheese, mixing thoroughly.
  • Top with cheese and bake in the oven for 10 to 15 minutes, or until the cheese is melted.

Notes

To save time, use about 5 to 6 cups of pre-cooked chicken. You can use one recipe of our healthy homemade Taco Seasoning Mix, Fajita Seasoning Mix, or a store-bought packet. Serve and enjoy! It’s delicious topped with avocado, guacamole, sour cream, or salsa. If you don't have an ovenproof skillet, simply transfer everything to a greased casserole dish.
