Cheesy Broccoli

Cheesy broccoli is a comforting, flavorful dish that transforms nutritious broccoli into a beloved side. With its creamy cheese sauce and endless customization options, it’s a delightful addition to any meal.

Ingredients
  

  • 1 pound of broccoli cut into florets (approximately 6 cups)
  • Water
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 1 cup of milk I used 1%
  • cup of shredded cheddar cheese
  • 2 tablespoons of grated Parmesan cheese
  • ¼ teaspoon of kosher salt plus more to taste
  • Pinch of ground mustard optional
  • Pinch of cayenne pepper optional

Instructions
 

  • Place the broccoli in a large saucepan and cover it with enough water to create a thin layer at the bottom of the pan (about 1 cup should suffice; the broccoli itself will not be submerged). Bring the water to a simmer over high heat, then cover the pan and let it simmer until the broccoli is bright green and crisp-tender, about 4 to 5 minutes. Drain the broccoli, then transfer it to a bowl and cover to keep warm.
  • Using a towel, carefully wipe the pan dry. Add the butter and melt it over medium-low heat. Once melted, sprinkle the flour on top and whisk constantly until the flour turns golden, which should take about 1 minute.
  • Gradually pour in the milk while whisking continuously to prevent lumps. Allow the mixture to simmer, whisking throughout, until the sauce thickens slightly, which will take about 3 minutes.
  • Reduce the heat to low. Whisk in the cheddar cheese a small handful at a time, ensuring it melts completely between additions (adding too much at once may cause the sauce to clump). Stir in the Parmesan, salt, and optional mustard and cayenne. Taste and adjust the seasoning as desired (I usually add a pinch of extra salt). Serve the broccoli warm, topped with the cheese sauce, or gently stir the broccoli into the sauce and serve it mixed.

Notes

TO STORE: Refrigerate the cheesy broccoli in an airtight storage container for up to 4 days.
TO REHEAT: Reheat leftovers in a skillet over medium heat or in the microwave. If you have stored the cheese sauce separately, you can warm it in the microwave or in a saucepan over medium-low heat.
TO FREEZE: Freeze the cheesy broccoli in an airtight container or freezer bag for up to 3 months. Thaw in the refrigerator before reheating.
