  • 1 Red Delicious apple
  • 1 Granny Smith apple
  • 2 tablespoons lemon juice
  • 2 cups matchstick carrots pre-cut bags are typically available at grocery stores
  • ¼ cup yellow onion finely diced
  • cup dried sweetened cranberries
  • ½ cup vanilla yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup canned mandarin segments drained

Instructions
 

  • Cut both apples into matchstick-style pieces and place them in a bowl.
  • Drizzle the lemon juice over the apple slices and toss thoroughly to ensure they are evenly coated.
  • Let the apples sit for about 5 minutes to absorb the lemon juice, preventing them from browning.
  • In a large mixing bowl, add the matchstick carrots.
  • Stir in the finely diced onion and dried sweetened cranberries.
  • After the apples have soaked for at least 5 minutes, transfer them to the mixing bowl.
  • Add the vanilla yogurt and mayonnaise.
  • Sprinkle in the sugar, salt, and pepper.
  • Mix all the ingredients together until well combined.
