Prep Time 20 minutes mins
Total Time 3 hours hrs 20 minutes mins
- 1 Red Delicious apple
- 1 Granny Smith apple
- 2 tablespoons lemon juice
- 2 cups matchstick carrots pre-cut bags are typically available at grocery stores
- ¼ cup yellow onion finely diced
- ⅓ cup dried sweetened cranberries
- ½ cup vanilla yogurt
- ¼ cup mayonnaise
- 1 tablespoon sugar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup canned mandarin segments drained
Cut both apples into matchstick-style pieces and place them in a bowl.
Drizzle the lemon juice over the apple slices and toss thoroughly to ensure they are evenly coated.
Let the apples sit for about 5 minutes to absorb the lemon juice, preventing them from browning.
In a large mixing bowl, add the matchstick carrots.
Stir in the finely diced onion and dried sweetened cranberries.
After the apples have soaked for at least 5 minutes, transfer them to the mixing bowl.
Add the vanilla yogurt and mayonnaise.
Sprinkle in the sugar, salt, and pepper.
Mix all the ingredients together until well combined.
Gently fold in the mandarin segments, ensuring they are evenly distributed.
Cover the bowl and refrigerate for at least three hours before serving.
Enjoy!
