Ingredients
  

  • ½ pound ground breakfast sausage
  • 6 large eggs beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons softened butter divided
  • 8 slices sourdough bread

Instructions
 

  • In a large non-stick skillet, cook and crumble the ground breakfast sausage until fully cooked and no longer pink. Transfer the cooked sausage to a medium mixing bowl lined with paper towels and set it aside. Wipe the skillet clean with a paper towel.
  • In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour the beaten eggs into the pan. Once the eggs start to set, gently stir to make scrambled eggs, cooking until the liquid is almost gone. Remove the pan from the heat.
  • Remove the paper towel from the sausage and leave the sausage in the bowl. Add the scrambled eggs to the bowl with the sausage and stir gently to combine. Wipe the skillet with a paper towel and heat it over medium heat.
  • Butter one side of each slice of bread. Place one slice of bread, buttered side down, into the skillet. Top the bread with one slice of Colby-Jack cheese. Spoon about ½ cup of the sausage-egg mixture onto the cheese. Add another slice of cheese on top of the mixture, then place the second slice of buttered bread on top with the buttered side facing up.
  • Cook the sandwich until the bread turns golden brown, about 3–4 minutes. Carefully flip the sandwich and cook until the second side is golden brown.
  • Remove the sandwich from the skillet and place it on a cutting board. Slice it in half if desired.
  • Repeat the process with the remaining bread, cheese, and sausage-egg mixture.
  • Serve immediately.

Notes

You can make these sandwiches with just eggs and cheese, or add your favorite cooked breakfast meat like bacon, sausage, or ham.
If you prefer your eggs over-easy, over-medium, or over-hard, feel free to make them that way instead of scrambling!
For a unique twist, try using mayo instead of butter to brown the bread – it might sound unusual, but it tastes delicious!
Sometimes, I like to add a slice or two of fresh tomato with a sprinkle of salt and pepper. It’s so good!
