Blueberry Avocado Smoothie

Ingredients
  

  • Flesh of 1/2 avocado 75 grams
  • 1 cup 140 grams frozen wild blueberries
  • 1 large ripe banana about 140 grams when peeled
  • 3/4 cup 180 ml milk of your choice (use paleo/vegan milk if preferred)
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon lemon zest optional
  • 2 teaspoons lemon juice optional
  • Optional: 1-2 tablespoons maple syrup

Instructions
 

  • Add all the ingredients, except the maple syrup, to a blender and blend until smooth. Taste the mixture and add maple syrup if needed. If the smoothie is gritty due to the frozen blueberries, keep blending until smooth.

Notes

If you used wild blueberries, your smoothie won’t turn brown as it sits in the fridge. However, if you use regular cultivated blueberries and don’t drink it all at once, cover the glass with a silicone stretch lid to prevent browning. Without a cover, the top of the smoothie may brown, but you can easily remove that layer before serving it to your kids if they're particular about color.
You will likely need to add a sweetener if you use cultivated blueberries.
