Beef Noodle Casserole
Combine cooked noodles with a seasoned tomato and beef mixture, top with cheddar cheese, and bake until the cheese is melted.

- 12 ounces uncooked egg noodles
- 2 tsp olive oil
- 1 1/4 lbs lean ground beef 90% lean
- 1 onion finely chopped
- 2 tsp minced garlic
- Salt and pepper to taste
- 16 ounces canned tomato sauce
- 15- ounce can diced tomatoes drained (petite cut preferred)
- 2 tsp Italian seasoning
- 2 cups shredded cheddar cheese
- 2 tbsp chopped parsley
- Cooking spray
Preheat oven to 400°F. Boil a pot of salted water and cook egg noodles according to package instructions.
While the noodles cook, heat olive oil in a large pan over medium-high heat.
Add ground beef to the pan and cook for 4-5 minutes, breaking it up with a spatula.
Add onion and garlic, cooking another 5 minutes until the onion softens and the beef is fully cooked. Season with salt and pepper.
Stir in tomato sauce, diced tomatoes, and Italian seasoning.
Drain the noodles, then mix them into the beef and sauce mixture.
Transfer the beef and noodle mixture to a 9"x13" baking dish coated with cooking spray. Sprinkle cheddar cheese on top.
Bake for 10-15 minutes until cheese is melted. Garnish with parsley before serving.
