Preheat your oven to 200°C | 390°F.
Wash and cube the potatoes, then place them in your baking dish.
Toss the potatoes with thyme, oregano, salt, pepper, and 1 tablespoon of olive oil, stirring to coat them evenly.
Place the feta in the center of the dish (I like to dip one side in the seasonings, then flip it over).
Add the garlic and half of the lemon to the tray, then drizzle the remaining olive oil over the potatoes and feta.
Bake for 45-55 minutes, until the potatoes are golden and crispy. Remove the garlic after 35 minutes if it begins to brown.
Once done, squeeze the roasted garlic cloves out of their skins and mash them with a sharp knife.
Stir the garlic mixture and the juice from the other half of the lemon back into the potatoes, along with the fresh basil. Gently mix the potatoes with the baked feta using a spoon.
Drizzle the honey over the top and garnish with shredded basil.
