Baked Feta Potatoes

Baked feta potatoes are a simple yet flavorful dish featuring crispy roasted potatoes paired with creamy, tangy feta cheese. This Mediterranean-inspired recipe is easy to customize and makes the perfect side or main dish for any occasion.

Ingredients
  

  • 1-2 large baking potatoes
  • 1 200 g block of feta
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 head of garlic top cut off
  • 1 lemon quartered
  • 1 tablespoon of honey
  • 1/4 cup 20g of fresh basil

Instructions
 

  • Preheat your oven to 200°C | 390°F.
  • Wash and cube the potatoes, then place them in your baking dish.
  • Toss the potatoes with thyme, oregano, salt, pepper, and 1 tablespoon of olive oil, stirring to coat them evenly.
  • Place the feta in the center of the dish (I like to dip one side in the seasonings, then flip it over).
  • Add the garlic and half of the lemon to the tray, then drizzle the remaining olive oil over the potatoes and feta.
  • Bake for 45-55 minutes, until the potatoes are golden and crispy. Remove the garlic after 35 minutes if it begins to brown.
  • Once done, squeeze the roasted garlic cloves out of their skins and mash them with a sharp knife.
  • Stir the garlic mixture and the juice from the other half of the lemon back into the potatoes, along with the fresh basil. Gently mix the potatoes with the baked feta using a spoon.
  • Drizzle the honey over the top and garnish with shredded basil.
  • Serve and enjoy!

Notes

If the potatoes aren’t fully cooked by the end of the suggested time, you may want to remove the baked feta and continue roasting the potatoes until they’re done. Leaving the feta in too long can cause it to become rubbery.
To prevent this, I recommend cutting your potatoes into smaller cubes!
