- 8 oz cream cheese
- 1 cup grated cheddar cheese
- 1 cup salsa
- 1 tsp crushed red pepper flakes
- 2 tbsp taco seasoning
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 1/2 cup chopped cilantro
- 1 can 14 oz black beans
- 2 cups shredded cooked chicken
- 6 large flour tortillas
- Olive oil or cooking spray
- 1/2 cup shredded cheddar cheese optional
- For serving
- 1 cup guacamole
- 1 cup pico de gallo
- 1/2 cup sour cream
Prepare the Filling
In a bowl, mix together the cream cheese, grated cheese, salsa, and seasonings.
Fold in the black beans and shredded chicken.
Assemble the Chimichangas
Bake
Lightly spray the tops of the tortillas with olive oil or cooking spray, or brush it on if you prefer.
Bake at 350°F for 15 minutes.
Flip the chimichangas over and bake for another 15 minutes.
If desired, flip the chimichangas again, sprinkle with shredded cheddar cheese, and broil for a few minutes until the cheese melts.
