Air fryer chicken and vegetables is a quick, healthy meal full of flavor and texture. Customize it with your favorite vegetables and seasonings for endless possibilities.

Ingredients
  

  • 1 pound chicken breast cut into bite-sized pieces (2-3 medium chicken breasts)
  • 1 cup broccoli florets fresh or frozen
  • 1 zucchini chopped
  • 1 cup bell pepper chopped (any colors of your choice)
  • 1/2 onion chopped
  • 2 cloves garlic minced or crushed
  • 2 tablespoons olive oil
  • 1/2 teaspoon each of garlic powder chili powder, salt, and pepper
  • 1 tablespoon Italian seasoning or your preferred spice blend

Instructions
 

  • Preheat the air fryer to 400°F.
  • Cut the chicken and vegetables into small, bite-sized pieces and place them in a large mixing bowl.
  • Drizzle the oil over the chicken and veggies, then add the seasonings. Toss everything together until well coated.
  • Transfer the seasoned chicken and vegetables to the preheated air fryer, spreading them in a single layer. Cook for 10 minutes, shaking the basket halfway through, or until the chicken is cooked through and the vegetables are slightly charred. If your air fryer has a smaller capacity, you may need to cook in 2-3 batches.

Notes

Spices: Swap the Italian seasoning for your favorite spice blend—taco, Cajun, lemon pepper, or any other mix works wonderfully! Just remember to reduce the salt if your chosen blend already contains it.
Veggies: Feel free to substitute the vegetables with your preferred quick-cooking varieties. If using potatoes, air fry them for 10 minutes before adding the other ingredients.
